Gran Canaria, 2020
One of the most popular dishes in Gran Canaria is ‘Papas Arrugadas and Mojo’.
These are ‘Wrinkled Potatoes’ and most commonly served with a red and green salsa. They are best eaten with skins on and are a must if visiting any Canarian restaurants.
The dish is made from small new potatoes which are cleaned (but not peeled), then boiled in salt water. Once cooked, the water is removed and the potatoes are left in the pot on the stove to dry off, until they become shrivelled with a fine salt crust.
